    Soak the beans overnight using 1 gallon water per 1 pound of beans. Add about 2 tablespoons of salt to the water and mix thoroughly to ensure it melts.

    Drain the beans and rinse them thoroughly. Put them into a large pan, add bay leaf, 3 quarts of water, and one of the onions (split open).

    Bring beans to a boil and let simmer for about half an hour. Cover the pan and cook until the skins of your organic pinto beans split open.

    Once beans are cooked, drain them and remove bay leaf and onion.
    NOTE: Reserve the liquid when draining pinto beans.

    Heat up vegetable oil in a pan and cook jalapenos, garlic, and the remaining onion. Once they are golden, add beans and stir. Add chipotle and stir again. Cook for a few minutes folding the dish with a wooden spoon.

    Add 2 cups of the liquid you reserved from the beans. In case you forgot, you can replace it with vegetable stock. The amount of liquid you’ll need might vary, so be sure to have some more on hand.
