    Salvia hispanica
(commonly found on chia pets and marketed on silly clay figures at Christmas), is a species of flowering plant in the mint family,
    Lamiaceae
, native to central and southern Mexico and Guatemala, which bears a bounty of highly nutritious seeds rich in Omega-3 and complete protein. The 16th century
    Codex Mendoza
provides evidence that chia was cultivated by the Aztecs in pre-Columbian times; historians have suggested that it was as important
    as corn to them
. Chia seeds are still used in Mexico and Guatemala today, with the seeds sometimes ground, while whole seeds are used for nutritious drinks and as a food source like any other nut or seed. They can be easily sprouted and used as a garnish in salads and other dishes. Soak in water to thicken overnight and add to morning smoothies.
Chia seeds absorb and retain water and so are sometimes used for
    weight loss
. The seeds pull water weight out of the human body. They are also highly nutritious.
    Chia seeds are
    very high in protein
(just one ounce gives you almost 10% of your daily protein needs!) and other nutrients.
Chia is grown commercially for its seed
    oil
, an oil that is rich in omega-3 fatty acids.
In a one-ounce (28 g) sample, dried chia seeds contained 9% of the Daily Value for protein (4g), 13% fat (9g) (57% of which is ALA) and 42% dietary fiber (11g), based on a daily intake of 2000 calories. The seeds also contain the essential minerals phosphorus, manganese, calcium, potassium and sodium in amounts comparable to other edible, nutritious seeds, such as flax or sesame.
    Organic Notice:
Some eBay vendors are not keeping within USDA organic law.
Organic items must be certified and the certifying agency must be named and be USDA accredited.
I see other herbal vendors who claim organic or certified organic with prices that speak otherwise. Be Careful! Fraud exists on eBay in organic herbs, or at least illegal labeling does. I see essential oil vendors claiming to have organic oils but selling at my wholesale cost. Obviously, they are selling non-organic oils. My herbs cost more because they are truly organic. Ask all vendors who certifies their herbs and oils as organic before you buy!
